Shortcut PHO

This is one of my all time favourite recipes as it is so simple and quick to make, is tasty and can be adjusted so easily to hit your macros as needed by simply adjusting the beef and noodle ratios. Many times this is the last meal of my day and it can be easily used to fill remaining calories and macros with slight adjustments. Enjoy.

Shortcut Pho

- 4 cups low sodium pho broth

**available in all grocery stores

- 2 tablespoon fish sauce

- ⅛ teaspoon cinnamon

- ⅛ teaspoon coriander

- Dash ground cloves

- 12 ounces beef sirloin steak, very thinly sliced into strips

- 170g rice vermicelli noodles

- ½ cup fresh cilantro

- green onions, sliced into 1/2 inch pieces

- 1 Lime

Step 01

Juice half the lime; cut remaining half into wedges. In a 4-qt. pot combine lime juice (and remainder of lime itself), broth, fish sauce, cinnamon, coriander, and cloves. Bring to boiling; reduce heat. Simmer, uncovered, 15-25 minutes.

Step 02

Boil water, lower temperature and place rice noodles in for 6-8 min until cooked to desired softness

Step 03

Divide beef into desired amounts/bowl.

**Beef can be dropped into served pho for medium rare beef or dropped into broth in final stages for more thorough cooking based on personal preference.

Step 04

Divide noodles among bowls. Spoon broth over noodles. Top bowls with cilantro and green onions. Serve with lime wedges. Add beef if desiring medium rare to cook in broth while serving. (my preference, but not Claire's)

Step 05

Top with hoisin sauce if desired.
