VEGGIE CHILLI

Ingredients

3TB Extra V. Olive Oil

1 onion minced

2 fresh cloves of garlic, minced

4 carrots diced

4 celery diced

2 cans crushed tomatoes

2 cans Kidney beans (I use black beans)

2 cans Pinto beans (navy beans work)

1 can corn (or fresh if you got it!) ** optional- I like colour :) 

2TB Cumin******* This is a lot of spice!!!!! I usually half it because my kids won’t eat it if it's too hot!

2TB chilli powder **** alot!!!

Sea salt

Fresh ground pepper

¼ cup apple cider vinegar

3 TB maple syrup 

2 TB tomato paste/ or ketchup ;)

1 cup water

Directions

In a large Pot pour olive oil and place on medium heat.

Add onion, ½ the spices.

Cook until onion is translucent, add garlic. Cook for 2 min

Add celery, carrot and cook until tender

Add tomato, rest of spices, beans, apple cider vinegar, water, tomato paste and maple syrup.

Bring to a boil  and simmer for 1 hour

Sea salt to taste

Serve over brown rice with fresh cilantro, avocado slices and hot sauce. Or my personal fav- with tortillas:

******my kids like it when I add baked beans sometimes

******* the nice thing about chili is that you can really do what you like, you can omit or add what you like. Add more spice, or less etc…
